Pepperoni Rolls

We have always been a huge fan of Pepperoli's from Mazzios but they are so greasy it about makes you sick. Well we found an inspiration recipe to make them a little healthier and not nearly as greasy.

Ingredients
1 can refrigerated pizza crust (we used the Pillsbury kind)
garlic salt
Italian seasoning
1 cup sliced pepperoni (used the mini pepperonis)
1 cup shredded cheese (we used the Italian blend which is Parmesan, provolone, romano, fontina, and asiago cheese)
pizza sauce

Directions
Preheat oven to 425
On a large cutting board or wax paper (we just used cutting board) put flour on and roll out pizza crust.
Season crust with garlic salt and Italian seasoning
add pizza sauce to crust

top with cheese and pepperoni
start with a short end, roll crust into a TIGHT log
slice into 1" sections
place in lightly greased glass dish and bake for 13 minutes.
Serve with pasta sauce for dipping.

Recommendations for next time
1) more pizza sauce (it made it so good!)
2) go easy on the pepperoni (think we put a few too many)

Other than these 2 things it turned out delicious! Just like pepperolis but without all the grease. This could easily be altered to make other pizzas as well.

Lone Star Chili

Sunday we went to Lone star and I got chili as a side. Well after tasting it I knew instantly this was the most amazing recipe for chili I had ever had and Ive had quite a few chilis. I found the recipe for chili and we made it last night for dinner and I just have to say its mighty close. The tomato sauce really makes a huge difference in this recipe.


1.5 lb ground beef
1 diced onion
1 15 oz. chili beans with liquid
1 28 oz. crushed tomatoes
1 8 oz can tomato sauce
1 cup water
1 tbsp. white vinegar
1 tsp. salt
2 tbsp. chili powder
1/4 tsp garlic powder
1/2 tsp cumin
1 tbsp olive oil

Optional garnishments
grated cheddar cheese
diced onion
canned whole jalapeno chili peppers

Directions:
1. Brown ground beef in a large saucepan over medium heat. Drain fat.
2. Add diced onion and olive oil and saute for about 3-4 minutes.
3. Add remaining ingredients and simmer for 1 hour, stirring occassionally.
4. Serve with the cheese, diced onion, and jalapeno garnish on top.
