Dads Burgers

My dad has made these burgers for quite a while and our family always enjoys them when he makes them. I call them the perfect burger thats better than any restaurant burger Ive found!

Servings: 20 (1/4 burger)
5 lbs ground beef
garlic powder, sprinkle
1/2 small bottle BBQ sauce
1/4 c. chiptole hot sauce
parsley, sprinkle
1/2 c. soy sauce
1 c. bread crumbs
1 small onion
1/2 c. Worcestershire sauce

Mix everything together and cook on grill until done.

Taco Soup

1 can black beans
1 can kidney beans
1 can pinto beans
2 cans chopped tomatoes
1 small onion, chopped
1 can whole kernel corn, drained
1 1b. ground beef, browned
1 pkg. Hidden Valley Salad dressing mix
1 pkg. taco seasoning mix
1/2 cup water
 
Brown beef and onions and drain. In a large pot, add all ingredients. The corn is the only canned vegetable you drain. Heat for approximately 30 minutes. 
 
Such a good quick meal!

Lone Star Chili

Sunday we went to Lone star and I got chili as a side. Well after tasting it I knew instantly this was the most amazing recipe for chili I had ever had and Ive had quite a few chilis. I found the recipe for chili and we made it last night for dinner and I just have to say its mighty close. The tomato sauce really makes a huge difference in this recipe.


1.5 lb ground beef
1 diced onion
1 15 oz. chili beans with liquid
1 28 oz. crushed tomatoes
1 8 oz can tomato sauce
1 cup water
1 tbsp. white vinegar
1 tsp. salt
2 tbsp. chili powder
1/4 tsp garlic powder
1/2 tsp cumin
1 tbsp olive oil

Optional garnishments
grated cheddar cheese
diced onion
canned whole jalapeno chili peppers

Directions:
1. Brown ground beef in a large saucepan over medium heat. Drain fat.
2. Add diced onion and olive oil and saute for about 3-4 minutes.
3. Add remaining ingredients and simmer for 1 hour, stirring occassionally.
4. Serve with the cheese, diced onion, and jalapeno garnish on top.

Cheddar's Baked Spasagna

Prep Time: 20 mins
Total Time: 1 hr

Ingredients
  • 1 1/2 lbs spaghetti noodles, uncooked
  • 2 lbs mozzarella cheese
  • 8 ounces ricotta cheese
  • 8 ounces sour cream
  • 1 1/4 cups half-and-half
  • 1/2 cup grated parmesan cheese, divided use
  • 1 teaspoon dried oregano leaves
  • 1 tablespoon chopped fresh basil
  • 1/2 teaspoon white pepper
  • 1 teaspoon chopped garlic
  • 2 teaspoons kosher salt
  • 1 1/2 teaspoons olive oil

    Directions
    1. Preheat oven to 350 degrees.
    2. Cook spaghetti al dente according to package directions. Rinse under cold water and drain. Place in large mixing bowl.
    3. In another mixing bowl, stir together sour cream, ricotta, half-and-half, mozzarella, oregano, basil, white pepper, garlic, salt, and half the Parmesan cheese.
    4. Add above cheese mixture to the spaghetti. Using hands, mix gently until spaghetti is evenly coated with mixture.
    5. Rub a 9x13 glass baking dish with the olive oil.
    6. Gently place spaghetti mixture into prepared dish. Top with remaining Parmesan cheese.
    7. Cover dish with aluminum foil and bake at 350 degrees in pre-heated oven for 30 minutes.
    8. Remove from oven, remove foil and place dish on cooling rack for 10 minutes.
    9. Cut into six-eight squares and top with meat sauce below, or your favorite meat or marinara sauce. 
    Meat Sauce.
    1 24-oz. jar spaghetti sauce.
    12 oz. ground beef.
    1 Tbs. chopped garlic.
    1 C chopped onion.
    1 teaspoons kosher salt.
    1 teaspoons dried leaf oregano.
    1 Tbs. chopped fresh basil.
    1 teaspoons granulated sugar.
    ½ C red wine.
    ¼ C Romano cheese.
    Additional salt, pepper to taste.
    Heat a heavy saucepan on medium heat for five minutes. Add ground beef and stir to break up clumps. Cook till meat is browned well. Drain meat and set aside.
    Add onions and garlic to saucepan and cook over medium heat for about five minutes, or until softened.
    Return reserved meat to pan, along with spaghetti sauce, salt, oregano, basil, sugar, red wine and romano cheese. Stir well to combine.
    Bring mixture to a simmer and cook uncovered for 30 minutes.
    Adjust seasoning with additional salt and pepper to taste.

Meatballs

Difficulty: Medium
Prep Time: 20 minutes
Cook Time: 32 minutes
Yield: 4 servings

Meatballs
1 1/2 pounds ground sirloin
1 large egg, beaten
1 cup (3 handfuls), Italian bread crumbs
1 medium onion, chopped fine
4 cloves garlic, crushed and minced
1/2 teaspoon crushed red pepper flakes
2 teaspoons (several drops) Worcestershire sauce,
1/4 cup (a couple of handfuls) flat-leaf parsley leaves, chopped
1/4 cup (a couple of handfuls) grated Parmigiano or Romano
Coarse salt and black pepper

Preheat oven to 450 degrees F.
Place ground sirloin in a large mixing bowl and punch a well into the center of meat. Fill well with the egg, bread crumbs, onion, garlic, red pepper flakes, Worcestershire, parsley, cheese, and a little salt and pepper. Mix up meatball ingredients until well combined, yet not over-mixed. Divide mix into 4 equal parts, roll each part into 4 balls and space equally onto a nonstick baking sheet. Place meatballs in oven and roast about 12 minutes. Break a meatball open and make sure meat is cooked through before removing from the oven.

Cook in homemade marinara sauce or one bought from store to give a great flavor

these are absolutely divine and one of our absolute favorite recipes. Its a Rachel Ray recipe. Ive leaned that the smaller you make them the better the flavor is. I tried them the first few times larger and they just were not nearly as good.

Crock Pot Roast

This is by far the best roast I have ever had, its so easy and everytime I always get "can I have the recipe" when fixing for others.

1 each beef roast -- 2.5 - 3.5 lbs
1 package ranch salad dressing mix
1 package brown gravy mix
1 package Italian dressing mix
1/2 cup warm water

Place roast in crockpot. Mix all 3 envelopes of mixes together and sprinkle on top of roast. Pour 1/2 cup warm water into bottom of crockpot. Cook on low 6 -7 hours.
I always add carrots, potatoes, and onion as well, so good!

Stuffed Pasta Shells


Pasta Ingredients:

to 16 uncooked dried jumbo pasta shells

Filling Ingredients:

tablespoon LAND O LAKES® Butter
1/3
cup chopped onion
1/2
teaspoon finely chopped fresh garlic
1/2
pound ground mild Italian sausage
1/2
pound ground beef
1/8
teaspoon dried basil leaves
1/8
teaspoon dried oregano leaves
8
ounces (2 cups) LAND O LAKES® Mozzarella Cheese, shredded
1 1/2
cups spaghetti sauce with mushrooms


Cook shells according to package directions. Drain; set aside.

Meanwhile, melt butter in 10-inch skillet until sizzling; add onion and garlic. Cook over medium heat until tender (3 to 4 minutes). Add beef and sausage. Continue cooking until meat is browned (8 to 12 minutes); drain. Add basil, oregano and 1 cup cheese.

Spread 3/4 cup spaghetti sauce on bottom of ungreased 13x9-inch baking dish. Stuff cooked shells with meat mixture; place, meat-side down, in prepared pan. Pour remaining spaghetti sauce over shells; sprinkle with remaining cheese.

Cover with waxed paper; microwave on MEDIUM HIGH (80% power) 5 minutes. Turn dish. Microwave on MEDIUM HIGH until heated through and cheese is melted (5 to 6 minutes). Let stand 2 to 3 minutes before serving.

Oven Directions: Heat oven to 350°F. Prepare as directed above. Reserve remaining 1 cup cheese. Cover pasta with aluminum foil. Bake for 20 to 25 minutes or until heated through. Remove aluminum foil; sprinkle with remaining cheese. Continue baking, uncovered, until cheese is melted (4 to 6 minutes).

TIP: Reduce oven temperature to 325°F if using 13x9-inch glass baking dish. Baking time may need to be increased.

MAKE AHEAD DIRECTIONS:

Pasta shells can be filled and frozen separately. Prepare pasta shells as directed above. Place filled shells onto ungreased baking sheet; cover and freeze. When frozen, place shells into resealable plastic freezer bag; seal bag. Place bag in freezer. To bake shells, heat oven to 350°F. Continue assembling casserole with frozen shells, sauce and cheese as directed in oven directions. Bake for 50 to 60 minutes or until heated through.

MAKE AHEAD DIRECTIONS:

Prepare recipe as directed above. Place filled shells into ungreased 13x9-inch baking pan. Cover; freeze. To bake, heat oven to 350°F. Bake for 50 to 60 minutes or until casserole is heated through.

Hamburger Goulash

1 lb. ground beef
4 potatoes, peeled and cubed
1/4 cup onion, very fine pieces
1 cup elbow macaroni
1 t salt
1 t black pepper
2 (8 ounce) cans tomato sauce
1 t garlic salt
2 t greek seasoning

Optional Items:
1 1/2 c frozen corn
1 (15 ounce) can cut green beans, drained
1 t Worcestershire sauce

Directions:
-Place ground beef in large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble, and set aside.
-Add all ingredients (except noodles) to browned ground meat and simmer for 1 hour, then add noodles.

Jeanie's Favorite Green Bean Casserole

1 lb of ground beef
5-6 potatoes (cut into small chunks)
1 can of tomato soup (small)
1/4 cup of water
dash of pepper
Green Beans (canned or frozen)
Shredded Cheese
Durkee Fried Onions

Brown Ground beef. At the bottom of an ungreased casserole dish, put the ground beef, add the water, dash of pepper, tomato soup, potatoes and green beans. spread Durkee Fried Onions over meat and green beans.. Bake Covered for 25 minutes at 350 degrees. Add Cheese (as much or as little as you like) and Remaining Fried Onions bake in oven for 5 more minutes till cheese melts (uncovered).

Beef Dip

1 lb. ground beef
1 c. chopped onion
1/2 c. chopped green bell pepper
2 garlic cloves, minced
3 c. grated Monterey Jack cheese
1/2 c. chopped chile pepper
2 tsp. Worcestershire sauce
1 c. tomato sauce
1/2 tsp. chili powder
Tortilla Chips

In a large nonstick skillet, combined beef, onion, bell pepper, & garlic. Cook over medium heat until beef is browned. Pour into a slow cooker, and add the cheese, chile pepper, Worcestershire sauce, tomato sauce, & chili powder. Stir well, cover, & cook on low for 2 hrs. Serve with tortilla chips. Makes 12 servings.

Makes a WONDERFUL dip but be forewarned is very addicting!

Chuck Roast BBQ

2 1/2 lb. chuck roast boneless
2 med. onions
1 12 oz. coke
1/3 c. Worcestershire sauce
1 1/2 tbsp. vinegar
1 1/2 tsp. beef bullion granules
3/4 tsp. dry mustard
3/4 tsp. chili powder
1/4 tsp. red pepper
3 cloves garlic
1 c. ketchup
1 tsp. butter/margarine
1 package buns

Roast & add onion. Combine next 8 ingredients & pour over roast. Chill 1 c. sauce.
Cook on high for 6 hrs or low 9 hrs. Remove roast & onion from crockpot, shred meat. Combine 1 cup sauce, ketchup, & butter cooking until heated.
Pour over shredded meat & keep warm in crockpot.

Best Hamburger Steak EVER!

Steak:
1 1/2 lbs. ground hamburger
1/4 cup flour
1/4 tsp garlic powder
salt and pepper
1 med onion sliced
Gravy:
1/4 cup flour
2 beef bullion cubes
kitchen bouquet brownong sauce 1/4 tsp
water
salt
pepper

Mix hamburger, salt, pepper, garlic powder, and flour together. Form into patties. Brown on both sides. Remove from skillet. Saute onion in the same pan, adding a small amount of oil if needed.

After sauteing the onion, remove from skillet and add flour for gravy. Stirring constantly, brown the flour. Stir water into the browned flour to make the gravy. Add boullion cubes, salt and pepper. Thin with water for desired thickness. Add Kitchen Bouquet if gravy isn't brown enough.

When gravy is made, put steaks and onion in gravy. Simmer for about 30 to 45 minutes, checking often and adding water to keep gravy from becoming too thick.

Serve with french fries, rice, mashed potatoes or your favorite side dish!

I always double up the gravy because the amount of gravy in the above recipe just isnt enough and well the gravy is soo good you will be wanting more

Chili

Ingredients
28 oz canned crushed tomatoes
1 can Bush's Chili Beans
1 1/2 pound cooked ground beef
1 can beef broth
1/2 cup onion(s)
1/2 clove garlic clove(s)
2 tsp chili powder
1/2 tsp ground cumin

Instructions
Mix all ingredients together and cook in crockpot for 4-6 hours.

Homestyle meatloaf

Ingredients
1 pound cooked ground beef
2 large egg(s)
1 cup Bread Crumbs, Plain
1/4 cup grated Parmesan cheese
1/4 cup onion(s)
1 Tbsp Italian seasoning
14 oz marinara sauce

Instructions
1. Heat oven to 350 degrees F. In large bowl, mix all ingredients except marinara sauce. Add 1 cup marinara sauace; mix well.

2. Press mixture into ungreased 8 X 4 inch loaf pan.

3. Bake at 350 F for 40 minutes. Pour remaining marinara sauce over meatloaf. Bake an additional 15 to 20 minutes or until meat is well browned and firm. Let stand 10 minutes before serving.

I have had to search for a recipe for no ketchup in a meatloaf recipe and finally accomplished it since my husband does not like ketchup at all. It turned out very good-better than I expected!
